Ingredients

Dumpling Wrappers

Pork Filling

  • ½ cup finely chopped Napa cabbage (or substitute with finely chopped bok choy or cabbage)

  • 1 tablespoon grated fresh ginger
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • ½ teaspoon white pepper
  • 1 teaspoon salt

Dipping Sauce

  • 2 tablespoons soy sauce
  • 2 tablespoons Chinese black vinegar (Chinkiang vinegar)
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced (optional)
  • Chili oil (optional for heat)

Method

1. Prepare the Filling

  • In a bowl, combine ground pork, chopped Napa cabbage, green onions, grated ginger, minced garlic, soy sauce, rice vinegar, sesame oil, white pepper, and salt. Mix thoroughly.
  • Refrigerate for 1 hour (optional but recommended for flavors to meld).

2. Assemble the Dumplings

  • Lay one dumpling wrapper flat in the palm.
  • Moisten the edge of the wrapper with water using your finger.
  • Place about 1 teaspoon of filling in the center of the wrapper.
  • Fold the wrapper over to form a half-moon shape, sealing the edges by pinching together.
  • For a traditional pleated look, make several small folds along the edge as you seal.
  • Place assembled dumplings on a tray, cover with a damp cloth to prevent drying.

3. Cook the Dumplings

  • Boiling method: Boil water in a large pot. Add dumplings. When they float, add 1 cup cold water. Repeat this process two more times until dumplings are fully cooked (~6-8 minutes). Drain and serve.
  • Pan-frying (Pot Stickers): Heat oil in a nonstick pan over medium-high heat. Arrange dumplings flat side down. Fry until the bottoms are golden (~2-4 minutes). Add ¼ cup water, cover immediately, and steam for 5-7 minutes until water evaporates. Remove lid and fry 1 more minute to crisp the bottom.

4. Prepare the Dipping Sauce

  • Mix soy sauce, black vinegar, sesame oil, and minced garlic in a small bowl. Add chili oil if desired.

5. Serve

  • Serve hot dumplings with dipping sauce on the side.
