Ingredients

  • 2 tbsp water
  • 1 tbsp ghee (clarified butter)
  • ½ tsp cardamom powder
  • Optional: chopped nuts (cashews, almonds) for garnish

Method

1. Prepare Jaggery Syrup

  • In a heavy pan, add jaggery and water. Heat gently, stirring until jaggery melts completely and forms a sticky syrup (1-string consistency).
  • To check string consistency: take a drop between thumb and forefinger and stretch; if it forms a thin thread before breaking, it’s ready.

2. Mix Coconut and Syrup

  • Add grated coconut and cardamom powder to the jaggery syrup in the pan.
  • Stir continuously on medium heat for 5-7 minutes until mixture thickens and leaves the sides of the pan, becoming slightly glossy.

3. Add Ghee and Cool Slightly

  • Stir in ghee for richness and flavor. Mix well and cook for another 2 minutes.
  • Remove from heat and let it cool just enough to handle.

4. Shape Ladoos

  • Grease your palms with ghee and shape the mixture into small round balls (ladoos).
  • Garnish with chopped nuts if desired. Cool completely on a plate.

Cooking Tips

  • Use fresh coconut for best texture and aroma; desiccated coconut works too but soak in warm water for 10 min first.
  • Stir constantly to avoid jaggery burning and to achieve the perfect binding consistency.
  • Adjust jaggery quantity for sweetness preference.
  • If mixture is too dry, add a teaspoon of warm water while cooking.
  • Store ladoos in an airtight container; they last up to a week.
