Tandoori Lamb

Introduction

Tandoori Lamb Chops are the ultimate indulgence for meat lovers—a fusion of tender lamb richly marinated with yogurt, garlic, ginger, fresh herbs, and aromatic Indian spices, then grilled or broiled to a smoky, caramelized finish. Whether it’s a celebratory feast or a special weekend dinner, these chops burst with layers of flavor and deliver restaurant-quality results at home. The luscious tandoori marinade tenderizes and infuses the meat, while charring brings out an irresistible depth. Pair them with mint raita and fresh salad for a show-stopping main course!

Ingredients

  • 8 lamb chops (about 1.5-2 lbs), frenched if possible
  • 2 tbsp Greek yogurt (full fat)
  • 1 tbsp lemon juice
  • 1 tbsp neutral oil (avocado, sunflower, or vegetable)
  • ½ tbsp garlic paste
  • ½ tbsp ginger paste
  • 2 tbsp finely chopped cilantro & mint
  • 1.25 tsp salt (to taste)

  • 1½ tsp coriander powder
  • ½ tsp cumin powder

Method

1. Prepare the Marinade

In a large bowl or zip bag, whisk together Greek yogurt, lemon juice, oil, garlic paste, ginger paste, chopped herbs, and all the ground spices. Add food coloring if using. Taste and adjust salt or lemon as desired.

2. Marinate the Chops

Pat lamb chops dry. Make shallow slashes in the fat for better marinade absorption. Rub the marinade generously onto each chop so it’s evenly coated. Cover and refrigerate at least 2 hours, preferably overnight for best flavor.

3. Bring to Room Temperature

Let marinated chops sit out for 30 mins before cooking so they cook evenly.

4. Grill or Broil

  • Grill: Preheat grill to high, brush with oil. Grill chops 5–7 mins per side for a deep char and pink interior (or longer for well done), flipping once halfway.
  • Oven Broiler: Place chops on a rack set over a foil-lined tray. Broil 5–7 mins per side, watching for a caramelized crust. Rest 5 mins before serving.

5. Serve

Squeeze with fresh lemon, sprinkle chopped mint/cilantro, and serve hot with mint raita, lemon wedges, and onion salad.

Cooking Tips

  • Marinating overnight deepens flavor and tenderizes the meat.
  • Don’t skip letting the meat come to room temp before grilling for even doneness.
  • Use a meat thermometer: aim for 145°F (63°C) for medium-rare, 160°F (71°C) for medium.
  • For crispier edges, finish under the broiler for 1–2 minutes after grilling.
  • Rest chops a few minutes after cooking for juicier meat.

Tandoori lamb chops were a special treat growing up at our family BBQs. My father, a grill-master at heart, taught me patience is key for that perfect char. The aroma of spices mingling with smoky charcoal still takes me back to summer evenings spent eating outside, everyone reaching for “just one more chop” before they disappeared.

History

Tandoori lamb is inspired by classic North Indian tandoori cooking, where meats are marinated in yogurt and spices, then cooked in a blazing-hot clay tandoor. Lamb’s succulence and rich flavor pair perfectly with bold tandoori spices, making chops a modern favorite on restaurant grills and family tables alike. Their signature bold color comes from Kashmiri chili or (sometimes) safe food coloring, echoing the dramatic platters of Indian weddings and festive gatherings!

Conclusion

Tandoori Lamb Chops deliver an explosion of taste and make a sensational centerpiece for any meal. Easy to prep and full of bold flavors, this is a recipe you’ll come back to again and again!
