Method

1. Prepare the Vanilla Custard

In a saucepan, heat milk, half the cream, and half the sugar until just steaming (do not boil). Split the vanilla bean; scrape seeds into the milk, then drop in the pod. Let steep 10 minutes. Remove pod.

2. Whisk Egg Yolks

In a large bowl, whisk egg yolks with the remaining sugar and a pinch of salt until pale and thick.

3. Temper the Eggs

Slowly pour the hot milk mixture into the egg yolks, whisking constantly.

4. Cook the Custard

Pour back into the saucepan. Cook on low, stirring constantly with a wooden spoon, until the custard thickens enough to coat the spoon (about 8–10 minutes). Do not let it boil.

5. Strain, Chill & Flavor

Strain the hot custard through a sieve into a large bowl. Add the remaining cream and vanilla extract if not using a bean. Cool over an ice bath, then refrigerate 4+ hours or overnight.

6. Churn and Freeze

Churn the custard in an ice cream maker according to manufacturer’s instructions, usually 20–25 minutes, until thick and soft-serve in texture. Transfer to a container, cover, and freeze 4-6 hours until firm.

7. Serve

Let sit at room temperature a few minutes for easy scooping. Serve plain, or with your favorite pies, fruit, or toppings.

Tips for Best Results

  • For pronounced flavor, use real vanilla bean or vanilla bean paste.
  • Don’t skip chilling the custard thoroughly—it helps prevent ice crystals.
  • Stir continuously when cooking the custard; curdled eggs mean too much heat or not stirring enough!
  • For a no-churn shortcut: whip 2 cups heavy cream, fold in 1 can sweetened condensed milk and vanilla, then freeze.

Classic vanilla ice cream was my grandmother’s summer ritual, and the sound of her old churner always filled the kitchen with anticipation. Now, when my kids help me scrape vanilla beans and take turns at the churn, it feels like carrying forward a sweet legacy—one bowl (and smile) at a time.

Vanilla ice cream traces its roots to 17th century Europe, where it was considered a luxury treat. Its pure flavor and creamy consistency made it a classic. Today, it is the most popular ice cream worldwide, celebrated for its versatility as both a solo and supporting dessert star.
