Ingredients

  • 1 cup thick poha (flattened rice)
  • ½ small onion, finely chopped
  • ¼ cup chopped carrot
  • ¼ cup peas (fresh or frozen)
  • ¼ cup chopped bell pepper or capsicum
  • 1 small potato, peeled and diced (optional but traditional)
  • 2 tbsp roasted peanuts
  • 1–2 green chilies, chopped (adjust to taste)
  • 8–10 fresh curry leaves
  • ½ tsp mustard seeds
  • ¼ tsp turmeric powder
  • Salt to taste
  • 1.5 tbsp oil (preferably peanut or sunflower)
  • Juice of ½ lemon or to taste
  • 2 tbsp fresh coriander, chopped

Method

1. Prep the Poha

  • Rinse poha in a colander under gentle running water—just until it softens but doesn’t break apart.

  • If not using pre-roasted peanuts, dry roast them in a pan on low-medium heat until golden and crisp.
  • Set aside.

3. Sauté the Vegetables

  • Heat 1.5 tbsp oil in a deep pan or kadhai.
  • Add mustard seeds. Let them pop, then add curry leaves and green chilies.
  • Sauté onions until translucent.

4. Assemble the Poha

  • Add the drained, fluffed poha to the pan.
  • Sprinkle a little more salt if needed and mix gently—do not mash.
  • Stir in roasted peanuts.

5. Steam and Finish

  • Cover and let cook on low for 2–3 minutes, allowing flavors to blend and poha to steam through.
  • Turn off the flame. Add lemon juice and chopped coriander.

6. Serve

  • Serve hot, garnished with extra peanuts and a lemon wedge.
