Introduction

Chicken samosas are a classic Indian snack beloved for their crispy, golden exterior and richly spiced minced chicken filling. Ingredients

For the Dough:

  • 1 ½ cups all-purpose flour
  • ½ tsp salt
  • 2 tbsp vegetable oil or melted ghee
  • ¾ cup water (approximate)

For the Chicken Filling:

  • 500g minced chicken (ground chicken)
  • 2 medium onions, finely chopped
  • 2 tsp ginger paste
  • 2 tsp garlic paste
  • 2-3 green chilies, finely chopped (adjust for spice)
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 tbsp chopped fresh coriander leaves
  • 2 tbsp tomato sauce (optional)
  • 3 tbsp oil
  • Salt to taste
  • Flour and water paste for sealing samosas (2 tbsp flour + 3 tbsp water)

  • Dough preparation & resting: 30 minutes
  • Filling preparation & cooking: 20-25 minutes
  • Assembling and frying: 30 minutes
  • Total: About 1 hour 25 minutes
  • Makes: 15-20 samosas

Method

Step 1: Make the Dough

Mix flour and salt in a bowl. Add oil or ghee and rub into the flour until crumbly. Gradually add water and knead into a firm smooth dough. Cover with a damp cloth and let it rest for 30 minutes.

Step 2: Prepare the Filling

Heat oil in a pan over medium heat. Add onions and green chilies; sauté until golden. Stir in ginger and garlic paste; cook for a minute. Add spices: turmeric, red chili, cumin, coriander, and garam masala. Add minced chicken and cook on high heat, stirring often, until cooked thoroughly and dry (around 10 minutes). Mix in tomato sauce and coriander leaves. Adjust salt, cook 2-3 more minutes. Set aside to cool.

Step 3: Prepare Flour-Water Paste

Mix flour and water to form a thick paste; use as glue for sealing samosas.

Step 4: Roll and Shape

Divide dough into small balls. Roll each into oval or round shapes, cut in half. Make a cone with each half, fill with chicken mixture, then seal edges using flour paste.

Step 5: Fry the Samosas

Heat oil in a deep pan to 180°C (350°F). Fry samosas carefully in batches until golden and crispy. Drain on paper towels.

Step 6: Serve

Serve hot with mint chutney, tamarind sauce, or ketchup.

  • Use firm dough, not too soft or stiff for easy rolling and sealing.
  • Fry on medium heat for even cooking and crisp texture.
