Ingredients

  • 4 slices whole wheat or multigrain bread
  • 1 cup fresh spinach leaves, washed
  • ½ cup grated cheese (cheddar, mozzarella, or processed cheese)
  • 1 tsp garlic, minced
  • ½ small onion, finely chopped (optional)
  • ½ green chili, finely chopped (optional, for grown-ups)
  • ¼ tsp freshly crushed pepper
  • Salt, to taste
  • Butter or ghee, for toasting
  • 1 tbsp fresh coriander, chopped (optional)

Method

1. Blanch the Spinach
