It’s Pushpa’s favorite “quick-fix” for filling everyone’s tummy—warm, flavorful, and secretly healthy. Even Amy—who’s always skeptical about oats—loves this dish thanks to the rainbow of crunchy vegetables and zesty lemon.
Ingredients
- 1 cup rolled oats (not instant)
- 1 tbsp oil (or ghee)
- 1 tsp mustard seeds
- 1 sprig fresh curry leaves
- 1 medium onion, finely chopped
- 1 small carrot, diced
- 1/4 cup green peas
- 1/4 cup chopped beans (optional)
- 1 small tomato, chopped
- 1–2 green chilies, finely sliced (to taste)
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- Salt, to taste
- 2.5–3 cups water (adjust for desired texture)
- 1 tbsp fresh coriander, chopped (for garnish)
- Juice of half a lemon

Method
- Prep the Veggies:
Dice all vegetables and keep them ready. This step is great for involving kids—Amy loves separating peas! - Toast the Oats:
Heat a dry pan on medium and lightly toast the oats for 2–3 minutes until aromatic. Transfer to a plate. - Temper & Sauté:
In the same pan, heat oil. Add mustard seeds, let them crackle, followed by curry leaves and green chilies. Add onions and sauté until translucent. - Cook the Vegetables:
Add carrots, peas, beans, and tomato. Sprinkle in turmeric, coriander powder, and cumin powder. Sauté for 3–4 minutes until vegetables soften slightly but remain vibrant. - Add Toasted Oats:
Stir in the toasted oats and mix well with the vegetables and spices. - Simmer:
Pour in 2.5–3 cups water and salt. Stir, cover, and let simmer on low heat for about 6–8 minutes, stirring occasionally, until oats cook and absorb nearly all the liquid. - Finish:
Turn off the heat. Add a generous squeeze of lemon juice and sprinkle with fresh coriander. Cover and let stand for 2 minutes for flavors to meld.

- Serve hot, topped with more fresh coriander and a side of yogurt or coconut chutney.
