Ingredients
For the Idli Batter:
- 1 cup idli rice or regular rice
- ½ cup urad dal (split, dehusked black gram)
- ¼ cup poha (flattened rice)
- ¼ tsp fenugreek seeds (optional, for extra softness)
- Salt, to taste
- Water, as needed
For the Veggie Mix:
- ½ cup grated beetroot
- ½ cup grated carrot
- ¼ tsp turmeric powder
- ½ tsp cumin seeds
- 1–2 green chilies, finely chopped (optional)
- 2 tbsp fresh coriander, chopped
- 1 tsp oil (for sautéing vegetables)
- Pinch of black pepper (optional)
Preparation and Cooking Time
- Batter soaking & fermentation: 8–12 hours (overnight)
- Preparation: 20 minutes
- Steaming: 12–15 minutes
- Yield: 24 mini idlis or 12 regular idlis

Method
1. Prepare the Basic Idli Batter
a. Soak & grind:
- Wash the rice, urad dal, poha, and (if using) fenugreek seeds separately.
- Soak all in plenty of water for at least 4–6 hours.
- Drain and grind dal with poha and methi to a smooth, fluffy batter with some water.
- Grind rice separately to a slightly coarse batter.
- Mix both batters. Add salt, cover, and ferment overnight in a warm place until doubled and bubbly.
b. Quick option:
Use store-bought readymade idli batter for a fast weekday breakfast.
2. Prep the Vegetables
- In a small pan, heat 1 tsp oil and add cumin seeds. When they sizzle, add grated beetroot, carrot, turmeric, green chilies, and black pepper.
- Sauté on medium for just 2–3 minutes until raw smell disappears but veggies retain color and crunch.
- Turn off heat, add chopped coriander, and cool.
3. Mix Veggies into Batter
- Gently fold the sautéed beetroot and carrot mixture into the fermented idli batter.
- Don’t over-mix; you want streaks of color! Adjust salt if needed.
4. Steam the Idlis
- Lightly grease idli moulds (mini or regular).
- Pour the colorful batter into each mould.
- Steam in an idli cooker or large pot with water at the base, covered, for 12–15 minutes (mini) or 15–18 minutes (regular), until a skewer inserted comes out clean.
- Allow to cool a bit before removing with a spoon.
Tips for Perfect Beetroot & Carrot Idli
- Fermented batter gives best idlis! If using readymade batter, bring it to room temperature before adding veggies.
- Don’t overcook veggies: Keep them crisp and colorful for texture and nutrition.
- For extra softness: Add a spoonful of yogurt to batter just before steaming.
- Variation: Add green peas, corn kernels, or chopped spinach for extra brightness and flavor.
