Ingredients

For the Cheela (makes 4 cheelas):

  • ¾ cup sooji (semolina/rava)
  • 1 cup plain yogurt (curd)
  • ~¾ cup water (as needed for batter)
  • ¼ cup finely chopped onion
  • ¼ cup grated carrot
  • ¼ cup finely chopped capsicum/bell pepper
  • 1–2 green chilies, finely chopped (to taste)
  • 2 tbsp fresh coriander leaves, chopped
  • ¼ tsp turmeric powder
  • ½ tsp red chili powder (optional)
  • ½ tsp cumin seeds
  • Salt to taste
  • 1–2 tsp oil/ghee for each cheela

For the Tomato Salsa:

  • 2 ripe tomatoes, finely chopped
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped
  • 1–2 tbsp fresh coriander or parsley, chopped
  • Juice of ½ lemon
  • Salt and pepper to taste

Method

1. Prepare the Batter

  • In a large bowl, combine sooji and yogurt. Mix well, then add water gradually to create a pourable, thick batter (like pancake batter).
  • Let it rest for 10 minutes so the sooji hydrates and softens.

2. Mix in Veggies and Spices

  • Add chopped onion, grated carrot, bell pepper, green chilies, coriander, turmeric, red chili powder, cumin seeds, and salt.
  • Mix well. Add a splash more water if batter is too thick—it should flow but not be runny.

3. Make the Tomato Salsa

  • In a separate bowl, combine chopped tomatoes, onion, green chili, coriander, lemon juice, salt, and pepper.
  • Toss everything together. Taste and adjust seasoning. Chill till serving for best flavor.

4. Cook the Cheelas

  • Heat a nonstick tava/skillet on medium.
  • Pour a ladleful of batter in the center, spreading gently outward in a circle (about 5–6 inches).
  • Drizzle a few drops of oil/ghee around the edges. Cover and cook for 1–2 minutes until bottom turns golden-brown.
  • Flip gently and cook the other side for another minute.
  • Remove and repeat with remaining batter.

5. Serve

  • Serve warm cheelas stacked with chilled, fresh tomato salsa on the side (or spooned on top for extra zing!).
